Ingredients

Scale
  • 1 pound fresh green beans, trimmed and cut into 1-inch pieces
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup French fried onions, divided
  • 1 cup shredded cheddar cheese (optional)
  • Salt to taste

Instructions

  1. Wash the fresh green beans thoroughly under cold running water.
  2. Trim the ends and cut them into 1-inch pieces.
  3. Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes.
  4. Transfer the green beans to a bowl of ice water for 5 minutes, then drain and set aside.
  5. In a large mixing bowl, combine the cream of mushroom soup, milk, soy sauce, black pepper, garlic powder, and salt. Whisk until smooth.
  6. Add half of the French fried onions to the mixture. If using cheddar cheese, fold it in now.
  7. Gently fold in the blanched green beans, ensuring they are evenly coated.
  8. Preheat your oven to 350°F (175°C).
  9. Grease a 2-quart baking dish with cooking spray or butter.
  10. Pour the green bean mixture into the prepared baking dish and spread evenly.
  11. Sprinkle the remaining French fried onions on top.
  12. Bake in the preheated oven for 25-30 minutes until bubbly.
  13. For an extra crispy topping, broil for an additional 2-3 minutes, watching closely.
  14. Remove from the oven and let sit for 5-10 minutes before serving.
  15. Scoop out portions and serve warm as a side dish.

Notes

  • For added flavor, sauté chopped onions and garlic in olive oil before mixing.
  • Substitute cream of mushroom soup with a homemade or low-fat version for a healthier option.
  • Experiment with different toppings like crushed crackers or grated Parmesan cheese.
