- 1 cup French fried onions, divided
- 1 cup shredded cheddar cheese (optional)

Instructions
- Wash the fresh green beans thoroughly under cold running water.
- Trim the ends and cut them into 1-inch pieces.
- Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes.
- Transfer the green beans to a bowl of ice water for 5 minutes, then drain and set aside.

- Add half of the French fried onions to the mixture. If using cheddar cheese, fold it in now.

- Sprinkle the remaining French fried onions on top.
