Description
Refreshing grapefruit salad with mint, red onion, and a tangy honey-lime dressing. Feta and toasted nuts are optional additions.

- 2 large grapefruits, preferably Ruby Red
- 1/2 cup fresh mint leaves, roughly chopped
- 1/4 cup red onion, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey (or maple syrup for vegan option)
- 1 tablespoon lime juice, freshly squeezed
- 1/4 teaspoon sea salt, or to taste
- 1/8 teaspoon black pepper, freshly ground
- Optional: 1/4 cup crumbled feta cheese (or vegan feta alternative)
- Optional: 1/4 cup toasted pecans or walnuts, roughly chopped
- Optional: Arugula or spinach leaves for serving as a base
Instructions
- Prepare the Grapefruit: Wash grapefruits. Cut off top and bottom. Slice away the peel and pith. Segment the grapefruit over a bowl to catch juices. Squeeze membranes for extra juice. Strain juice (optional).
- Prepare Other Ingredients: Thinly slice red onion (soak in cold water for 10 minutes to mellow, if desired). Roughly chop mint. Toast nuts (optional) in a dry skillet or oven until fragrant and lightly browned.
- Make the Dressing: In a small bowl, whisk together olive oil, honey (or maple syrup), lime juice, salt, and pepper. Taste and adjust seasonings.
- Assemble the Salad: Arrange arugula or spinach on a platter (optional). Gently combine grapefruit segments, red onion, and mint in a large bowl. Pour dressing over salad and toss gently. Add feta (optional) and nuts (optional).
- Serve: Serve immediately.

- For a milder red onion flavor, soak the slices in cold water for 10 minutes before adding to the salad.
- Toast nuts for enhanced flavor and crunch.
- Adjust the dressing to your taste preferences, adding more honey for sweetness or lime juice for tanginess.
- This salad is versatile! Add avocado, other citrus fruits, grilled shrimp or chicken, red pepper flakes for heat, or different herbs.
- To make it vegan, omit the feta cheese and use maple syrup instead of honey.
- You can prepare the grapefruit segments and dressing ahead of time and store them separately in the refrigerator. Just combine them shortly before serving.
