Savory garlic parmesan mushrooms sautéed with white wine, herbs, and a creamy parmesan sauce. Perfect as a side or topping!

- 1.5 lbs Cremini mushrooms, cleaned and quartered (or sliced if small)
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese, plus more for garnish
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/4 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio), optional
- 1/4 cup chicken broth (or vegetable broth)
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Clean the mushrooms: Gently wipe mushrooms with a damp paper towel to remove dirt. Avoid soaking. If very dirty, quickly rinse and pat dry.
- Prepare Mushrooms: Quarter or slice mushrooms to roughly uniform sizes. Mince garlic finely. Grate Parmesan cheese finely. Chop parsley finely.
- Heat Oil and Butter: Heat olive oil and butter in a large skillet over medium-high heat until butter is melted and shimmering.
- Sauté Mushrooms: Add mushrooms to the hot skillet in a single layer (cook in batches if needed). Cook for 8-10 minutes, stirring occasionally, until browned and softened.
- Add Garlic and Thyme: Add minced garlic and dried thyme to the skillet. Cook for about 1 minute, stirring constantly, until garlic is fragrant.
- Deglaze (Optional): If using white wine, pour it into the skillet and scrape up any browned bits. Simmer for 2-3 minutes, until reduced slightly.
- Add Broth and Lemon Juice: Pour chicken broth into the skillet and bring to a simmer. Add lemon juice. Simmer for 3-5 minutes, until the sauce has thickened slightly.
- Stir in Parmesan and Red Pepper Flakes (Optional): Remove the skillet from the heat and stir in the grated Parmesan cheese until melted and creamy. Add red pepper flakes, if using.
- Season: Taste and season with salt and freshly ground black pepper to taste.
- Garnish and Serve: Sprinkle chopped fresh parsley over the mushrooms. Serve immediately.

- Don’t overcrowd the pan; cook mushrooms in batches if needed.
- Use fresh ingredients for the best flavor.
- Be careful not to burn the garlic.
- Adjust seasoning to your taste.
- For a richer sauce, stir in a tablespoon or two of heavy cream at the end.
