Tender sirloin steak bites seared to perfection and coated in a rich, flavorful garlic butter sauce. A quick and easy appetizer or main course!

- 1.5 lbs Sirloin steak, cut into 1-inch cubes
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1/2 teaspoon Smoked paprika
- 1/2 teaspoon Dried thyme
- 1/4 teaspoon Red pepper flakes (optional, for heat)
- Salt and freshly ground black pepper, to taste
- 6 tablespoons Unsalted butter
- 6 cloves Garlic, minced
- 1 tablespoon Fresh parsley, chopped
- 1 tablespoon Fresh chives, chopped
- 1/2 teaspoon Dried oregano
- 1/4 teaspoon Red pepper flakes (optional, for heat)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Lemon juice
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped
- Fresh chives, chopped
- Sesame seeds
Instructions
- Prep the Steak: Pat the sirloin steak cubes dry with paper towels.
- Season the Steak: In a large bowl, toss the steak cubes with olive oil, garlic powder, onion powder, smoked paprika, dried thyme, red pepper flakes (if using), salt, and pepper. Ensure each piece is evenly coated.
- Marinate (Optional): For more flavor, marinate in the refrigerator for 30 minutes to 2 hours.
- Heat the Pan: Place a large cast-iron skillet over medium-high heat until very hot.
- Sear the Steak: Add the seasoned steak cubes to the hot skillet in a single layer. Avoid overcrowding; cook in batches if needed. Sear each side for 2-3 minutes, until browned but still slightly pink inside.
- Check for Doneness: Use a meat thermometer. Medium-rare: 130-135°F (54-57°C). Medium: 135-145°F (57-63°C).
- Remove from Pan: Remove the steak bites from the skillet and set aside on a plate.
- Melt the Butter: In the same skillet, melt the butter over medium heat.
- Sauté the Garlic: Add the minced garlic to the melted butter and sauté for 1-2 minutes, until fragrant, being careful not to burn.
- Add Herbs and Spices: Stir in the fresh parsley, fresh chives, dried oregano, and red pepper flakes (if using). Cook for another minute.
- Deglaze with Worcestershire and Lemon Juice: Pour in the Worcestershire sauce and lemon juice. Stir to deglaze the pan.
- Simmer the Sauce: Reduce the heat to low and simmer the sauce for 2-3 minutes, allowing it to thicken slightly. Season with salt and pepper to taste.
- Add Steak to Sauce: Add the cooked steak bites back to the skillet with the garlic butter sauce. Toss to coat evenly.
- Heat Through: Cook for another minute or two, until the steak is heated through and the sauce is bubbling slightly.
- Serve Immediately: Garnish with fresh parsley, fresh chives, and sesame seeds (if desired).
