  • 2 teaspoons lime zest
  • 4 cups vanilla ice cream, softened (high quality recommended)

  • Coarse salt (for rimming slices)

Instructions

  1. In a medium-sized bowl, combine graham cracker crumbs, melted butter, and granulated sugar.
  2. Mix until the crumbs are evenly moistened and resemble wet sand. Add a tiny bit more melted butter if too dry.
  3. Transfer the crumb mixture into a 9-inch pie plate. Press firmly and evenly across the bottom and up the sides.
  4. Bake in a preheated oven at 350°F (175°C) for about 8-10 minutes for a sturdier crust.
  5. Let the crust cool completely before adding the filling.
  6. Ensure cream cheese is softened. Microwave in short intervals if needed.
  7. In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sweetened condensed milk, mixing until well combined.
  8. Pour in the tequila, lime juice, and orange liqueur. Mix on low speed until well incorporated.
  9. Add the lime zest to the mixture.
  10. Soften the ice cream for 15-20 minutes before starting.
  11. Add the softened ice cream to the cream cheese mixture. Gently fold it in using a spatula until just combined. Be careful not to overmix.
  12. Carefully pour the margarita filling into the cooled graham cracker crust. Spread it evenly with a spatula.
  13. Cover the pie with plastic wrap, pressing it gently onto the surface of the filling. Freeze for at least 4 hours, or preferably overnight.
  14. Let the pie sit at room temperature for about 10-15 minutes to soften slightly.
