A refreshing and easy-to-make Frozen Margarita Pie with a graham cracker crust and creamy tequila-lime filling. Perfect for a hot day!
Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- 5 tablespoons unsalted butter, melted
- ¼ cup granulated sugar
- 1 (14 ounce) can sweetened condensed milk
- 1 (8 ounce) package cream cheese, softened
- ½ cup tequila (silver or blanco recommended)
- ½ cup lime juice, freshly squeezed (about 4–5 limes)
- ¼ cup orange liqueur (such as Cointreau or Triple Sec)
- 2 teaspoons lime zest
- 4 cups vanilla ice cream, softened (high quality recommended)
- Lime slices
- Whipped cream
- Coarse salt (for rimming slices)
Instructions
- In a medium-sized bowl, combine graham cracker crumbs, melted butter, and granulated sugar.
- Mix until the crumbs are evenly moistened and resemble wet sand. Add a tiny bit more melted butter if too dry.
- Transfer the crumb mixture into a 9-inch pie plate. Press firmly and evenly across the bottom and up the sides.
- Bake in a preheated oven at 350°F (175°C) for about 8-10 minutes for a sturdier crust.
- Let the crust cool completely before adding the filling.
- Ensure cream cheese is softened. Microwave in short intervals if needed.
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sweetened condensed milk, mixing until well combined.
- Pour in the tequila, lime juice, and orange liqueur. Mix on low speed until well incorporated.
- Add the lime zest to the mixture.
- Soften the ice cream for 15-20 minutes before starting.
- Add the softened ice cream to the cream cheese mixture. Gently fold it in using a spatula until just combined. Be careful not to overmix.
- Carefully pour the margarita filling into the cooled graham cracker crust. Spread it evenly with a spatula.
- Cover the pie with plastic wrap, pressing it gently onto the surface of the filling. Freeze for at least 4 hours, or preferably overnight.
- Let the pie sit at room temperature for about 10-15 minutes to soften slightly.
- Garnish with lime slices and whipped cream. Rim each slice with coarse salt.
- Slice the pie into wedges. Serve immediately and enjoy!
Notes
- Adjust the tequila to your preference.
- Experiment with different orange liqueurs.
- Add pureed fruit for a fruity variation.
- Use chocolate graham crackers for a chocolate crust.
- For a non-alcoholic version, omit the tequila and orange liqueur and replace the tequila with limeade or a non-alcoholic tequila alternative. Increase the lime juice slightly to compensate for the missing liquid.
- Store leftover pie in the freezer, tightly wrapped in plastic wrap or in an airtight container, for up to a week.
