- 2 sheets frozen puff pastry, thawed
- 8 ounces feta cheese, crumbled
- 1 large egg, beaten
- 2 tablespoons milk or cream
- 2 tablespoons sesame seeds
- 1 tablespoon dried thyme
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Freshly ground black pepper, to taste
- Optional: 1 tablespoon honey or maple syrup (for drizzling)
Instructions
- Prepare the Feta Filling: In a medium bowl, crumble the feta cheese. Add dried thyme, minced garlic, and freshly ground black pepper. Drizzle with olive oil and mix gently until well combined. Taste and adjust seasonings as needed.
- Prepare the Puff Pastry: Thaw puff pastry according to package instructions. Unfold one sheet on a lightly floured surface and cut into squares or rectangles (9-12 pieces per sheet). Repeat with the second sheet.
- Assemble the Pastries: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place a spoonful of feta filling in the center of each puff pastry square.
- Fold the Pastries: Fold each square diagonally to form a triangle, in half to form a rectangle, or place another puff pastry square on top of the filling. Press the edges together firmly to seal, crimping with a fork if desired.
- Bake: Place the assembled pastries on the prepared baking sheet, leaving space between each.
- Egg Wash and Sesame Seeds: In a small bowl, whisk together the beaten egg and milk or cream. Brush the tops of the pastries with the egg wash and sprinkle with sesame seeds.
- Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.
- Cool and Serve: Remove from oven and let cool slightly on the baking sheet before transferring to a wire rack to cool completely. Drizzle with honey or maple syrup (optional). Serve warm or at room temperature.
Notes
- Use high-quality feta cheese for the best flavor.
- Experiment with other herbs and spices in the feta filling, such as oregano, rosemary, dill, or red pepper flakes.
- Add vegetables like spinach, sun-dried tomatoes, or roasted red peppers to the filling.
- Make mini pastries by cutting the puff pastry into smaller squares.
- Freeze assembled pastries before baking for later use. Bake from frozen, adding a few extra minutes to the baking time.
