  • 1 pound ground beef (or turkey for a lighter option)
  • 1 can (15 oz) chili beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup sour cream (for serving)
  • 1/4 cup sliced green onions (for garnish)

Instructions

  1. In a large skillet, heat a tablespoon of oil over medium heat. Once the oil is hot, add the ground beef. Use a wooden spoon to break it apart as it cooks.
  2. Cook the beef for about 5-7 minutes, or until it’s browned and no longer pink. Make sure to stir occasionally to ensure even cooking.
  3. Once the beef is cooked, drain any excess fat from the skillet.
  4. Add the taco seasoning mix to the beef, following the instructions on the packet, usually adding about 2/3 cup of water. Stir well to combine.
  5. Add the drained chili beans and the can of diced tomatoes with green chilies to the skillet. Stir everything together and let it simmer for about 10 minutes.
  6. While the beef mixture is simmering, prepare your toppings by shredding the lettuce and dicing the fresh tomatoes. Set them aside in separate bowls.
  7. If using black olives, slice them into rounds and place them in a small bowl.
  8. Grate the cheddar cheese if you haven’t done so already.
  9. Once the beef mixture has simmered and thickened, preheat your oven to 350°F (175°C) if you want to bake it for a crispy finish.
  10. In a large baking dish, spread a layer of Fritos corn chips at the bottom.
  11. Spoon the beef mixture over the Fritos, spreading it evenly.
  12. Sprinkle a generous layer of shredded cheddar cheese over the beef mixture.
  13. If baking, place the assembled dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.
  14. Once the cheese is melted and bubbly, remove the dish from the oven and let it cool for a few minutes before serving.
  15. Scoop out portions of the Frito pie onto plates. Top each serving with shredded lettuce, diced tomatoes, sliced olives, and a dollop of sour cream.
