- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach leaves
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon lemon juice
- Fresh basil, for garnish (optional)
Instructions
- Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Place the salmon fillets in the skillet, skin-side down if applicable. Cook for 4-5 minutes without moving them.
- Gently flip the salmon and cook for an additional 3-4 minutes until cooked through. Remove from skillet and cover loosely with foil.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
- Add halved cherry tomatoes and cook for 2-3 minutes until softened.
- Stir in fresh spinach leaves and cook for 1-2 minutes until wilted.
- Pour in heavy cream and bring to a gentle simmer, allowing it to thicken slightly.
- Stir in grated Parmesan cheese and Italian seasoning. Adjust seasoning with salt and pepper as needed.
- Add lemon juice to the sauce and stir to combine.
- Place the seared salmon back into the skillet, spooning sauce over the top. Simmer for 1-2 minutes.
- Serve by placing a scoop of sauce on the plate and topping with a salmon fillet.
- Optionally, sprinkle fresh basil on top for added flavor and presentation.
