  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach leaves
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice
  • Fresh basil, for garnish (optional)

Instructions

  1. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Place the salmon fillets in the skillet, skin-side down if applicable. Cook for 4-5 minutes without moving them.
  4. Gently flip the salmon and cook for an additional 3-4 minutes until cooked through. Remove from skillet and cover loosely with foil.
  5. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  6. Add halved cherry tomatoes and cook for 2-3 minutes until softened.
  7. Stir in fresh spinach leaves and cook for 1-2 minutes until wilted.
  8. Pour in heavy cream and bring to a gentle simmer, allowing it to thicken slightly.
  9. Stir in grated Parmesan cheese and Italian seasoning. Adjust seasoning with salt and pepper as needed.
  10. Add lemon juice to the sauce and stir to combine.
  11. Place the seared salmon back into the skillet, spooning sauce over the top. Simmer for 1-2 minutes.
  12. Serve by placing a scoop of sauce on the plate and topping with a salmon fillet.
  13. Optionally, sprinkle fresh basil on top for added flavor and presentation.
