  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) grated Parmesan cheese
  • 1 cup (150 g) sun-dried tomatoes, chopped
  • 2 cups (60 g) fresh spinach
  • 1/4 cup (60 ml) chicken broth (optional, for thinning sauce)
  • Fresh basil, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
  3. Drain the pasta and drizzle with a little olive oil to prevent sticking.
  4. Season chicken breasts with salt, pepper, and Italian seasoning.
  5. In a large skillet, heat olive oil over medium-high heat until shimmering.
  6. Add chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  7. Remove chicken from skillet, let it rest for a few minutes, then slice into strips or bite-sized pieces.
  8. In the same skillet, reduce heat to medium and sauté minced garlic for about 30 seconds until fragrant.
  9. Pour in heavy cream, stirring to combine with garlic. Let it simmer for 2-3 minutes to thicken slightly.
  10. Gradually whisk in grated Parmesan cheese until melted and creamy. Add chicken broth if the sauce is too thick.
  11. Stir in chopped sun-dried tomatoes and fresh spinach, cooking for another 2-3 minutes until spinach wilts.
  12. Add sliced chicken back into the skillet, stirring to coat in the creamy sauce.
  13. Add drained pasta to the skillet and toss gently to coat. Add more chicken broth or pasta water if needed.
  14. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
  15. Serve in bowls or on plates, twirling the pasta for presentation.
  16. Sprinkle with fresh basil and additional grated Parmesan if desired.
