- 8 oz (225 g) fettuccine or pasta of your choice
- 2 tablespoons olive oil
- 1 pound (450 g) boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- 1 cup (150 g) sun-dried tomatoes, chopped
- 2 cups (60 g) fresh spinach
- 1/4 cup (60 ml) chicken broth (optional, for thinning sauce)
- Fresh basil, for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the fettuccine and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
- Drain the pasta and drizzle with a little olive oil to prevent sticking.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil over medium-high heat until shimmering.
- Add chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
- Remove chicken from skillet, let it rest for a few minutes, then slice into strips or bite-sized pieces.
- In the same skillet, reduce heat to medium and sauté minced garlic for about 30 seconds until fragrant.
- Pour in heavy cream, stirring to combine with garlic. Let it simmer for 2-3 minutes to thicken slightly.
- Gradually whisk in grated Parmesan cheese until melted and creamy. Add chicken broth if the sauce is too thick.
- Stir in chopped sun-dried tomatoes and fresh spinach, cooking for another 2-3 minutes until spinach wilts.
- Add sliced chicken back into the skillet, stirring to coat in the creamy sauce.
- Add drained pasta to the skillet and toss gently to coat. Add more chicken broth or pasta water if needed.
- Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
- Serve in bowls or on plates, twirling the pasta for presentation.
- Sprinkle with fresh basil and additional grated Parmesan if desired.
