Instructions

  1. Prepare Coffee Mixture: In a small bowl, dissolve instant coffee granules in hot water. Stir until dissolved and let cool slightly.
  2. Cream Butter and Sugars: In a large bowl, cream together softened butter, granulated sugar, and light brown sugar until light and fluffy (3-5 minutes).
  3. Add Eggs and Extracts: Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract and cooled coffee mixture until combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
  5. Combine Wet and Dry: Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in Add-ins: Fold in chocolate chips and chopped nuts (if using).
  7. Chill Dough: Cover and chill dough in the refrigerator for at least 30 minutes (or up to 2 hours, or overnight).
  8. Preheat Oven: Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  9. Scoop and Bake: Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between cookies.
