  • Author: Maria
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

This City Chicken recipe features tender pork and veal cubes, breaded and pan-fried to a golden crisp. Drizzled with a savory sauce, it’s a nostalgic and comforting dish perfect for any dinner table.

Ingredients

Scale
  • 1 pound of pork shoulder, cut into 1-inch cubes
  • 1 pound of veal, cut into 1-inch cubes
  • 1 cup of all-purpose flour
  • 2 large eggs
  • 1 cup of breadcrumbs (preferably Italian style)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 1 cup of chicken broth
  • 1 tablespoon of Worcestershire sauce
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather all your ingredients on a clean countertop.
  2. In a large mixing bowl, combine the pork and veal cubes. Season with salt, pepper, garlic powder, onion powder, and paprika. Mix well.
  3. Skewer the meat cubes onto wooden or metal skewers, alternating between pork and veal. If using wooden skewers, soak them in water for 30 minutes.
  4. Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs.
  5. In the first dish, add flour. In the second dish, whisk the eggs. In the third dish, add breadcrumbs and a pinch of salt and pepper.
  6. Dip each skewer into the flour, then the beaten eggs, and finally roll in the breadcrumbs, ensuring they are well coated.
  7. In a large skillet, heat olive oil and butter over medium heat.
  8. Carefully place the breaded skewers in the skillet, cooking in batches if necessary. Cook for 4-5 minutes on each side until golden brown and cooked through.
  9. Transfer the cooked skewers to a plate lined with paper towels to absorb excess oil.
  10. In the same skillet, add chicken broth and Worcestershire sauce, scraping the bottom to deglaze. Simmer for about 5 minutes to reduce slightly.
  11. Taste the sauce and adjust seasoning with salt and pepper. For a thicker sauce, mix cornstarch with water and add to the sauce, stirring until thickened.
  12. To serve, place the skewers on a platter, drizzle with sauce, and garnish with chopped parsley. Serve with mashed potatoes, rice, or a fresh salad.

Notes

  • For added flavor, consider marinating the meat before seasoning.
  • For a crunchier texture, double-dip the skewers in the egg and breadcrumbs.
