- 2 cups of egg noodles
- 1 pound of boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons of vegetable oil
- 1 medium onion, finely chopped
- 3 cloves of garlic, minced
- 1 cup of bell peppers, sliced (any color you prefer)
- 1 cup of carrots, julienned
- 1 cup of broccoli florets
- 3 tablespoons of soy sauce
- 2 tablespoons of oyster sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of ground black pepper
- 1 teaspoon of salt (adjust to taste)
- 1 tablespoon of cornstarch mixed with 2 tablespoons of water (for thickening)
- 2 green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions (6-8 minutes) until al dente. Drain and rinse under cold water. Set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken pieces, season with salt and black pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add more oil if needed. Sauté chopped onion for 2-3 minutes until translucent. Add minced garlic and stir for 30 seconds until fragrant. Add bell peppers, carrots, and broccoli. Stir-fry for 5-7 minutes until tender but still crisp.
- Return the cooked chicken to the skillet. Mix well. In a small bowl, combine soy sauce, oyster sauce, and sesame oil. Pour over chicken and vegetables, stirring to coat. Add cooked egg noodles and gently toss to combine.
- Stir in the cornstarch mixture and cook for an additional 2-3 minutes, stirring constantly until the sauce thickens. Adjust seasoning if necessary.
- Remove from heat and transfer to a serving platter or bowls. Garnish with chopped green onions and sesame seeds if desired. Serve hot.
