  • 1 pound of boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons of vegetable oil

  • 3 cloves of garlic, minced
  • 1 cup of bell peppers, sliced (any color you prefer)
  • 1 cup of carrots, julienned
  • 1 cup of broccoli florets
  • 3 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of salt (adjust to taste)
  • 1 tablespoon of cornstarch mixed with 2 tablespoons of water (for thickening)
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions (6-8 minutes) until al dente. Drain and rinse under cold water. Set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken pieces, season with salt and black pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add more oil if needed. Sauté chopped onion for 2-3 minutes until translucent. Add minced garlic and stir for 30 seconds until fragrant. Add bell peppers, carrots, and broccoli. Stir-fry for 5-7 minutes until tender but still crisp.
  4. Return the cooked chicken to the skillet. Mix well. In a small bowl, combine soy sauce, oyster sauce, and sesame oil. Pour over chicken and vegetables, stirring to coat. Add cooked egg noodles and gently toss to combine.
  5. Stir in the cornstarch mixture and cook for an additional 2-3 minutes, stirring constantly until the sauce thickens. Adjust seasoning if necessary.
  6. Remove from heat and transfer to a serving platter or bowls. Garnish with chopped green onions and sesame seeds if desired. Serve hot.
