- 2 cups cooked chicken, shredded or diced
- 8 ounces egg noodles
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup breadcrumbs (optional, for topping)
- 2 tablespoons butter, melted (optional, for topping)
Instructions
- Start by boiling a large pot of salted water. Once the water is at a rolling boil, add the egg noodles.
- Cook the noodles according to the package instructions, usually around 7-9 minutes, until they are al dente. You want them to be firm since they will continue to cook in the oven.
- Once cooked, drain the noodles in a colander and set them aside. Rinse them briefly with cold water to stop the cooking process and prevent them from sticking together.
- In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, and milk. Stir until well blended.
- Add in the shredded cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, black pepper, and salt. Mix everything together until all the ingredients are evenly distributed.
- Gently fold in the cooked egg noodles, ensuring they are well coated with the creamy mixture.
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with cooking spray or butter.
- Pour the chicken noodle mixture into the prepared baking dish, spreading it out evenly.
- For a crunchy topping, mix the breadcrumbs with the melted butter and sprinkle it over the top of the casserole.
- Place the baking dish in the preheated oven and bake for 25-30 minutes until bubbly and lightly golden brown.
- After 25 minutes, check the casserole. If the top isnt golden enough, broil for an additional 2-3 minutes, watching closely to prevent burning.
- Once done, remove from the oven and let it sit for 5-10 minutes before serving.
