Instructions
- Prepare the chicken cutlets by seasoning them with salt and pepper.
- Coat the chicken cutlets in flour, then dip them in beaten eggs, and finally coat them with breadcrumbs.
- Heat oil in a skillet over medium heat and cook the chicken cutlets until golden brown and cooked through.
- While the chicken is cooking, prepare the kale Caesar salad by massaging the kale with olive oil and lemon juice.
- Add Caesar dressing, croutons, and grated Parmesan cheese to the kale and toss to combine.
- Once the chicken cutlets are done, assemble the sandwich by placing a cutlet on a slice of bread, topping it with the kale Caesar salad, and adding another slice of bread on top.
- Serve the sandwich with extra Caesar dressing on the side if desired.
