  • 1 tablespoon fresh ginger, peeled and minced
  • 1/4 cup white miso paste
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 2 tablespoons maple syrup (or honey for non-vegan option)
  • 1 tablespoon soy sauce (or tamari for gluten-free option)
  • 12 tablespoons water (to thin, if necessary)
  • Optional: 1 teaspoon sesame seeds for garnish

Instructions

  1. Wash and peel the carrots. Grate them using a box grater or food processor until you have about 1 cup. Set aside in a mixing bowl.
  2. Peel the ginger using a spoon or vegetable peeler and mince it finely.
  3. In a medium-sized mixing bowl, add the white miso paste and rice vinegar. Whisk together until smooth.
  4. Stir in the grated carrots and minced ginger until well combined.
  5. Pour in the sesame oil and whisk until the mixture is creamy and well combined.
  6. Add the maple syrup (or honey) and whisk until blended.
  7. Pour in the soy sauce (or tamari) and whisk again to enhance the flavor.
  8. If the dressing is too thick, add 1-2 tablespoons of water, one at a time, whisking well after each addition until desired consistency is reached.
  9. Taste the dressing and adjust sweetness or saltiness as needed by adding more maple syrup or soy sauce.
