- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup creamy peanut butter
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup chopped peanuts (optional, for garnish)

- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray to prevent sticking.
- In a medium saucepan, melt the unsalted butter over low heat. Stir occasionally to ensure it melts evenly without browning.
- Once the butter is melted, remove the saucepan from heat and add the granulated sugar. Mix well until the sugar is fully incorporated and the mixture is smooth.
- Allow the butter and sugar mixture to cool slightly, then add the eggs one at a time, whisking well after each addition.
- Stir in the vanilla extract, ensuring it is evenly distributed throughout the mixture.
- In a separate bowl, sift together the cocoa powder, all-purpose flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
- Fold in the semi-sweet chocolate chips.
- In a small microwave-safe bowl, add the creamy peanut butter. Microwave it for about 15-20 seconds to soften it slightly.
- Once softened, stir the peanut butter until it is smooth and creamy. Set aside.
- Using a spoon or a small ice cream scoop, fill each muffin cup about 2/3 full with the brownie batter.
- After filling the muffin cups, take a teaspoon of the softened peanut butter and drop it onto the center of each brownie batter-filled cup. Use a toothpick or skewer to gently swirl the peanut butter into the brownie batter.
- For an extra touch, sprinkle chopped peanuts on top of each brownie bite if desired.
- Place the muffin tin in the preheated oven and bake for 12-15 minutes. The brownie bites are done when a toothpick inserted into the center comes out with a few moist crumbs.
- Once baked, remove the muffin tin from the oven and allow the brownie bites to cool in the tin for about 5 minutes.
- After 5 minutes, carefully transfer the brownie bites to a wire rack to cool completely.
- Once cooled, serve the brownie bites as is or dust them with powdered sugar.
- For an indulgent treat, drizzle melted chocolate or additional peanut butter over the top before serving.
- These brownie bites pair wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
