  • 1/4 teaspoon baking powder
  • 1/2 cup creamy peanut butter
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup chopped peanuts (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray to prevent sticking.
  2. In a medium saucepan, melt the unsalted butter over low heat. Stir occasionally to ensure it melts evenly without browning.
  3. Once the butter is melted, remove the saucepan from heat and add the granulated sugar. Mix well until the sugar is fully incorporated and the mixture is smooth.
  4. Allow the butter and sugar mixture to cool slightly, then add the eggs one at a time, whisking well after each addition.
  5. Stir in the vanilla extract, ensuring it is evenly distributed throughout the mixture.
  6. In a separate bowl, sift together the cocoa powder, all-purpose flour, salt, and baking powder.
  7. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
  8. Fold in the semi-sweet chocolate chips.
  9. In a small microwave-safe bowl, add the creamy peanut butter. Microwave it for about 15-20 seconds to soften it slightly.
  10. Once softened, stir the peanut butter until it is smooth and creamy. Set aside.
  11. Using a spoon or a small ice cream scoop, fill each muffin cup about 2/3 full with the brownie batter.
