A refreshing and vibrant Blackberry Mint Cooler, perfect for summer! This drink combines fresh blackberries, mint, lime, and sparkling water for a sweet, tart, and bubbly treat.

- 6 cups fresh blackberries, divided
- 1 cup granulated sugar, plus more for rimming (optional)
- 1 cup water
- 1 cup fresh mint leaves, plus more for garnish
- 1 cup fresh lime juice (about 8–10 limes)
- 8 cups ice cubes
- Sparkling water or club soda, to top
- Lime wedges, for garnish (optional)
Instructions
- Combine Blackberries, Sugar, and Water: In a medium saucepan, combine 4 cups of the fresh blackberries, the granulated sugar, and the water.
- Simmer the Mixture: Place the saucepan over medium heat and bring the mixture to a simmer. Stir occasionally to ensure the sugar dissolves completely.
- Add the Mint: Once the mixture is simmering, add the fresh mint leaves. Gently push the mint leaves down into the liquid to submerge them.
- Continue Simmering: Reduce the heat to low and let the mixture simmer for about 15-20 minutes. This allows the blackberries to soften and release their juices, and the mint to infuse its flavor into the syrup. Stir occasionally to prevent sticking.
- Strain the Syrup: Remove the saucepan from the heat and let the mixture cool slightly for about 5-10 minutes. Place a fine-mesh sieve over a heat-proof bowl. Pour the blackberry mixture through the sieve, pressing down on the solids with the back of a spoon to extract as much juice as possible. Discard the solids (or save them for compost!).
- Cool the Syrup: Let the strained blackberry mint syrup cool completely. You can speed up this process by placing the bowl in the refrigerator. The syrup will thicken slightly as it cools.
- Puree the Remaining Blackberries: In a blender or food processor, combine the remaining 2 cups of fresh blackberries with a tablespoon or two of water (if needed to help the blending process).
- Blend Until Smooth: Blend the blackberries until they are completely smooth.
- Strain (Optional): If you prefer a smoother puree, you can strain it through a fine-mesh sieve to remove any seeds. This step is optional, but it will result in a more refined texture.
- Set Aside: Set the blackberry puree aside until you’re ready to assemble the coolers.
- Prepare the Glasses (Optional): If desired, you can rim the glasses with sugar. To do this, spread some sugar on a small plate. Moisten the rim of each glass with a lime wedge, then dip the rim into the sugar, rotating the glass to coat it evenly.
- Add Blackberry Puree: Add about 2-3 tablespoons of blackberry puree to each glass. Adjust the amount depending on your preference.
- Add Lime Juice: Pour about 2-3 tablespoons of fresh lime juice into each glass. Again, adjust to your taste. If you like a tarter cooler, add a bit more lime juice.
- Add Blackberry Mint Syrup: Pour about 1/4 cup (4 tablespoons) of the cooled blackberry mint syrup into each glass. Start with this amount and adjust to your desired sweetness. You can always add more syrup if needed.
- Add Ice: Fill each glass with ice cubes.
- Top with Sparkling Water: Top each glass with sparkling water or club soda. Leave a little room at the top for garnishes.
- Stir Gently: Gently stir each cooler to combine all the ingredients. Be careful not to over-stir, as this can cause the sparkling water to lose its fizz.
- Garnish: Garnish each cooler with fresh mint sprigs and lime wedges. You can also add a few fresh blackberries for an extra touch.
- Taste and Adjust: Taste the cooler and adjust the sweetness or tartness as needed. If it’s too tart, add a little more blackberry mint syrup. If it’s too sweet, add a squeeze of lime juice.
- Serve Immediately: Serve the Blackberry Mint Coolers immediately and enjoy!

- Use Different Berries: Feel free to experiment with other berries, such as raspberries, blueberries, or strawberries. Each berry will add its own unique flavor to the cooler.
- Add a Splash of Alcohol: For an adult version of this cooler, add a shot of vodka, gin, or rum to each glass.
