  • 2 cups fresh broccoli florets, chopped finely
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a kick)
  • 1 tablespoon olive oil
  • Cooking spray or additional olive oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bring a pot of water to a boil. Add the chopped broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and transfer to a bowl of ice water to stop cooking. Drain again and pat dry.
  3. In a large mixing bowl, combine the blanched broccoli, cheddar cheese, Parmesan cheese, and breadcrumbs.
  4. Add minced garlic, onion powder, salt, black pepper, and red pepper flakes (if using) to the mixture.
  5. Crack the eggs into the bowl and mix everything together until well combined. If the mixture feels too dry, add a splash of water or more cheese.
  6. Form the mixture into balls, about 2 tablespoons each, and place them on a baking sheet lined with parchment paper, leaving space between each ball.
  7. Lightly spray the tops with cooking spray or drizzle with olive oil.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  9. Let cool for a few minutes before serving warm with your favorite dipping sauce.

Notes

  • Customize the cheese balls by adding cooked bacon bits or swapping out the cheddar for your favorite cheese.
