These Broccoli Cheese Balls are a tasty and healthy snack made with fresh broccoli, a blend of cheeses, and savory spices, all baked to a crispy golden finish. Perfect as an appetizer or a satisfying treat!

- 2 cups fresh broccoli florets, chopped finely
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (preferably whole wheat)
- 2 large eggs
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a kick)
- 1 tablespoon olive oil
- Cooking spray or additional olive oil for greasing
Instructions
- Preheat your oven to 400°F (200°C).
- Bring a pot of water to a boil. Add the chopped broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and transfer to a bowl of ice water to stop cooking. Drain again and pat dry.
- In a large mixing bowl, combine the blanched broccoli, cheddar cheese, Parmesan cheese, and breadcrumbs.
- Add minced garlic, onion powder, salt, black pepper, and red pepper flakes (if using) to the mixture.
- Crack the eggs into the bowl and mix everything together until well combined. If the mixture feels too dry, add a splash of water or more cheese.
- Form the mixture into balls, about 2 tablespoons each, and place them on a baking sheet lined with parchment paper, leaving space between each ball.
- Lightly spray the tops with cooking spray or drizzle with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Let cool for a few minutes before serving warm with your favorite dipping sauce.
Notes
- Customize the cheese balls by adding cooked bacon bits or swapping out the cheddar for your favorite cheese.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes to regain crispiness.
