Indulge in creamy Bacon Chive Mashed Potatoes, featuring fluffy russet potatoes blended with rich butter, tangy sour cream, crispy bacon, and fresh chives. This comforting side dish is perfect for elevating any meal!

Ingredients

Scale
  • 2 pounds of russet potatoes
  • 1/2 cup of unsalted butter
  • 1/2 cup of whole milk
  • 1/2 cup of sour cream
  • 1 cup of cooked bacon, chopped
  • 1/4 cup of fresh chives, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash the russet potatoes thoroughly under cold running water, scrubbing gently with a vegetable brush to remove dirt.
  2. Peel the potatoes using a vegetable peeler, or leave the skins on for a rustic texture.
  3. Cut the potatoes into evenly sized chunks, about 1 to 2 inches.
  4. Place the cut potatoes into a large pot and cover with cold water, ensuring the water level is about an inch above the potatoes.
  5. Add a generous pinch of salt to the water.
  6. Bring the pot to a boil over high heat, then reduce to medium and simmer for 15-20 minutes, or until fork-tender.
  7. Carefully drain the potatoes in a colander and let them sit for a minute to release excess steam.
  8. Return the drained potatoes to the pot.
  9. Add the unsalted butter to the hot potatoes, allowing it to melt.
  10. Pour in the whole milk and add the sour cream, mixing well.
  11. Mash the potatoes to your desired consistency using a potato masher or a hand mixer, being careful not to overmix.
  12. Fold in the chopped bacon and fresh chives, stirring until evenly distributed.
  13. Taste and season with salt and black pepper as needed.
  14. Transfer the mashed potatoes to a serving bowl and garnish with additional chives and crumbled bacon if desired.
  15. To keep warm before serving, cover with aluminum foil or place in a warm oven.

Notes

  • For fluffier mashed potatoes, soak the cut potatoes in cold water for 30 minutes before cooking.
  • Feel free to experiment with additional flavors like garlic or cream cheese.
  • These mashed potatoes can be made a day in advance and reheated gently.
