Ingredients

Scale
  • 1 can (15 oz) apricot halves in syrup
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup unsalted butter (2 sticks), melted
  • 1 cup chopped pecans or walnuts (optional)
  • 1 teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup granulated sugar (optional, for added sweetness)
  • Whipped cream or vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Open the can of apricot halves and drain the syrup into a bowl. Set the syrup aside for later use.
  3. In a 9×13 inch baking dish, arrange the apricot halves evenly across the bottom, cut side up for presentation.
  4. If desired, sprinkle granulated sugar over the apricot halves to enhance sweetness.
  5. Optionally, add ground cinnamon and vanilla extract over the apricots for added flavor.
  6. In a large mixing bowl, pour the entire box of yellow cake mix, breaking up any lumps.
  7. Pour the reserved apricot syrup over the cake mix.
  8. Add the melted unsalted butter and gently combine with a spatula or wooden spoon, leaving some lumps.
  9. If using, fold in the chopped pecans or walnuts.
  10. Spoon the cake mix topping over the arranged apricot halves, spreading it evenly without pressing down.
  11. Optionally, sprinkle a little extra cinnamon on top for added flavor.
  12. Place the baking dish in the preheated oven and bake for 40-45 minutes, until the top is golden brown and a toothpick comes out clean.
  13. Monitor the cake during the last 10 minutes; cover loosely with aluminum foil if it browns too quickly.
  14. Once baked, remove from the oven and cool for 10-15 minutes before serving.
  15. Scoop out portions of the apricot dump cake, ensuring to include both the topping and base.
  16. Top with whipped cream or vanilla ice cream for an indulgent treat.
  17. Garnish with additional chopped nuts or a sprinkle of cinnamon if desired.
