  • 1 package of puff pastry (2 sheets), thawed
  • 8 ounces of Brie cheese, cut into small pieces
  • 1 cup of apple butter
  • 1/4 cup of chopped pecans (optional)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon of fresh rosemary, finely chopped (optional)
  • Flour, for dusting
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a clean, floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thick.
  3. Cut the pastry into squares (about 3×3 inches) to yield 12-16 squares from each sheet.
  4. Place the squares on a baking sheet lined with parchment paper.
  5. Cut the Brie cheese into small pieces (1-inch cubes or thin rounds).
  6. In a small bowl, mix the apple butter with chopped pecans (if using) and fresh rosemary.
  7. Season the mixture with a pinch of salt and pepper.
  8. Take a square of puff pastry and place it on the baking sheet.
  9. Add about a tablespoon of the apple butter mixture in the center of the square.
  10. Place a piece of Brie cheese on top of the apple butter.
  11. Fold the corners of the pastry over the filling to create a pocket, pinching or folding to seal.
  12. Brush the tops with the beaten egg.
  13. Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
  14. Let cool for a few minutes before serving.
  15. Transfer to a serving platter and garnish with fresh rosemary or extra chopped pecans.
  16. Best served warm, reheat in the oven if made ahead.
