- 1 package of puff pastry (2 sheets), thawed
- 8 ounces of Brie cheese, cut into small pieces
- 1 cup of apple butter
- 1/4 cup of chopped pecans (optional)
- 1 egg, beaten (for egg wash)
- 1 tablespoon of fresh rosemary, finely chopped (optional)
- Flour, for dusting
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- On a clean, floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thick.
- Cut the pastry into squares (about 3×3 inches) to yield 12-16 squares from each sheet.
- Place the squares on a baking sheet lined with parchment paper.
- Cut the Brie cheese into small pieces (1-inch cubes or thin rounds).
- In a small bowl, mix the apple butter with chopped pecans (if using) and fresh rosemary.
- Season the mixture with a pinch of salt and pepper.
- Take a square of puff pastry and place it on the baking sheet.
- Add about a tablespoon of the apple butter mixture in the center of the square.
- Place a piece of Brie cheese on top of the apple butter.
- Fold the corners of the pastry over the filling to create a pocket, pinching or folding to seal.
- Brush the tops with the beaten egg.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
- Let cool for a few minutes before serving.
- Transfer to a serving platter and garnish with fresh rosemary or extra chopped pecans.
- Best served warm, reheat in the oven if made ahead.
- Pair with white wine or warm apple cider.
